Mineral

Calcium Lactate

A soluble calcium salt, common in wet foods with fine textures.

Calcium lactate, calcium gluconate and calcium chloride are soluble salts of calcium. They supply the mineral, and they help form or firm textures in wet foods, often working with gums or alginates. Because they dissolve, they suit foods where gritty calcium carbonate wouldn’t.

Calcium lactate has nothing to do with milk or lactose, despite the name, and it’s not a dairy ingredient.

Also written as: Calcium Gluconate, Calcium Chloride.
