Locust Bean Gum

A thickener from carob seeds, used to give wet food its texture.

Locust bean gum comes from the seeds of the carob tree, and it has nothing to do with insects. It thickens and gels wet foods, often with carrageenan or xanthan gum, which together form firmer gels than either alone.

It’s recognized as safe in animal feed, and it’s used in small amounts. Like other gums, it acts as a soluble fibre.
